That Fat Boy Slims – Recipe: Slimming World Diet Cola Chicken

Ingredients

  • 4 skinless and boneless chicken breasts, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 green pepper, diced
  • 1 onion, finely chopped
  • 330ml can of diet cola
  • 200ml boiling chicken stock
  • 120g passata with onions and garlic
  • 4 tbsp tomato purée
  • 2 garlic cloves, finely chopped
  • 2 tsp Worcestershire sauce
  • 1 tbsp dark soy sauce
  • 1 tsp dried mixed herbs
  • 200g sugar snap peas

Cooking

Place all the ingredients into a slow cooker on the medium setting and allow it to cook for around 6 hours.  You may wish to give it less/more time depending on your required consistency.  We removed the lid and turned it up to the highest setting for a further half an hour to allow the dish to thicken up.

If you want to have the meal cooked a lot quicker, you can cook on the hob using a low fat spray and stir-fry the chicken, peppers and onion for around 5 minutes or until lightly brown.  Add the diet cola, stock, passata, tomato purée, garlic, Worcestershire sauce, soy sauce and dried mixed herbs and stir well.  Bring it to the boil and then cover.  Reduce the heat to medium-low and simmer for around 15 minutes.  Add the sugar snap peas, stir and increase the heat to medium-high.  Allow to cook for another 10-15 minutes or until the chicken is cooked through and the vegetables are tender.  Again, you may wish to give it longer to allow the sauce to thicken.

Serve

You can serve this dish with a variety of things such as mash, rice…whatever you fancy (within your guidelines/syn allowances).
